Damson Jam recipe

Damsons are in and a short season so hurry to your stores now and grab some - they ll start to disappear by the end of next week. Victoria Plums and Greengages in stock now too!

You need -

200g fresh damsons (halved and destoned) .
100g runny honey (I used local Manx honey)
💜2 tbsp water

  •  add all Ingredients to a pan and bring to the boil. Reduce the heat slightly and keep stiring until the skin starts to some away from the fruit.

 

  • when most of the skin appears to be separate, pass the mixture through a sieve into a bowl, pressing down with a fork to keep as much of the fruit as possible but leaving behind the skin

 

  • return to the pan and bring back to the boil.

 

  • reduce to a simmer and stir occasionally for 10-15 minutes ensuring the jam doesn’t stick to the bottom of the pan.
  • when thickened pour into a jam jar and pop overnight in the fridge to continue to set✌🏻

It’s not a totally set jam but I like mine like that. I love buying fruit in season and there’s so much you can do with damsons! Damson gin anyone?!!
