Potatoes are definitely a favourite side dish for many, and these tasty hasselback potatoes are a quirky addition to your mid-week meal.

With crisp outer edges and fluffy, creamy middles, they're sure to go down a treat! 

We love making these with Manx spuds because, well, they're the best! 

Ingredients

  • 4 large Manx potatoes
  • 4 tablespoons IOM Creameries butter, melted 
  • Salt
  • Pepper
  • Fresh Thyme 

Instructions

  1. Pre-heat your oven to around 200c.
  2. Scrub clean the potatoes, then cut parallel slits deep into the potato, without slicing straight through.
  3. Create more slits across the whole potato about 1/4 inch apart, repeat on all spuds.
  4. Arrange the potatoes in an oven-proof dish and spread over half of the melted butter.
  5. Ensure the potatoes are well-seasoned with salt, pepper, and some sprigs of thyme.
  6. Bake in the oven for about 30 minutes and then spread over the remaining melted butter and bake for a further 30-40 minutes until golden and crisp.
  7. Remove from the oven, plate up and serve as a tasty side-dish!
