Everyone knows that the showstopper dish at Christmas is nothing without its compadre side dishes, and honey-roasted carrots is the way to go!

This easy warming recipe can be made completely with quality Manx ingredients too.

To make this savoury, sweet addition to your table, all you need is a deep roasting tin, carrots, honey, butter, and butter.

 

Ingredients

  • 600g carrots
  • 150ml water
  • 50g Isle of Man Creamery butter
  • 25g Manx honey
  • small bunch chives
  • a pinch of sea salt 

Instructions

  • STEP 1

    Heat oven to 200C/180C fan/gas 6.

     

    STEP 2

    Clean your carrots in warm water (feel free to add a teaspoon of baking soda to about 1.5L of water for a more thorough clean).

     

    STEP 3

    Slightly dry your carrots and place them in the deep roasting tin along with the honey, butter and 150ml of water. 

     

    STEP 4

    Cook in the oven for 1hr or just over until the carrots are tender and sticky.

     

    Step 5

    Scatter over the chives with a pinch of sea salt before serving. (If you want to jazz this up further, try adding some feta cheese or swap chives for coriander to achieve a different taste.)
