1-2 Salmon Fillets

Baby Potatoes or Sliced Potatoes

Cherry Tomatoes

2-3 Lemon Slices

Fresh Dill

2 Teaspoon Paprika

3 Garlic Cloves, minced

Garlic Powder (optional)

3 Tablespoon Olive Oil

Salt and Black Pepper

1 Teaspoon Chilli Flakes or Chilli Powder

1 Teaspoon Italian Herb or Mixed Dried

2 Teaspoon Furikake Seasoning

1 Lemon as Juice
Instructions

Preheat the oven to 200°C.

Toss the baby potatoes and cherry tomatoes with olive oil, salt, pepper, chilli, garlic and furikake. Spread into a baking dish.

Season the salmon with salt, pepper, paprika, chilli flakes and furikake. Place on top of the vegetables, drizzle with olive oil, then add mixed herbs, fresh dill and lemon slices.

Bake for 20–25 minutes, until the salmon is just cooked and the vegetables are tender.

Finish with extra fresh dill and a squeeze of lemon juice.

Serve with rice, crusty bread or enjoy it straight from the baking dish.
